Ingredients
All-purpose flour: 2 1/4 cups (or a gluten-free 1:1 blend)
Baking soda: 1/2 teaspoon
Baking powder: 1/2 teaspoon
Ground nutmeg: 1 teaspoon
Ground cinnamon: 3/4 teaspoon
Kosher salt: 1/4 teaspoon
Granulated sugar: 3/4 cup
Light brown sugar (packed): 1/4 cup
Unsalted butter (softened): 3/4 cup
Egg: 1 large
Vanilla extract: 1 1/2 teaspoons
Eggnog (full-fat): 1/2 cup
For the glaze:
Powdered sugar: 1 cup
Eggnog: 2-3 tablespoons
Optional Additions: Add a sprinkle of nutmeg or a touch of rum extract for a flavor twist.
Instructions
Step1: Preparation
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.
Step2: Make the Dough
In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
In another bowl, cream butter, granulated sugar, and brown sugar until light and fluffy using a mixer.
Add the egg and vanilla extract, mixing until well combined.
Gradually mix in the eggnog, followed by the dry ingredients. Continue until a smooth dough forms.
Step3: Shape the Cookies
Use a medium cookie scoop to form 2-tablespoon-sized dough balls.
Place the dough balls 2 inches apart on the baking sheets. Flatten each with the bottom of a glass sprayed with non-stick spray to about 1/2 inch thickness.
Step4: Bake
Bake for 9-11 minutes until the tops are set and edges lightly browned. Cool cookies on the sheet for 2-3 minutes, then transfer to a wire rack to cool completely.
Step5: Glaze
Whisk powdered sugar and eggnog until smooth.
Drizzle the glaze over the cooled cookies and let it set for 15 minutes. Cookies can be stacked after one hour.
Notes
Use fresh spices: Grate nutmeg fresh for the best flavor.
Don’t overmix: Mixing too much can make the cookies dense.
Measure flour correctly: Spoon it into the measuring cup and level it off to avoid adding too much.
