- 1/2 cup chicken broth
- 1/4 cup heavy cream (optional for richer sauce)
- 1 cup shredded Monterey Jack cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with garlic powder, paprika, salt, and pepper.
- In a large oven-safe skillet, heat olive oil over medium heat. Sear chicken breasts for 3-4 minutes per side until golden brown. Remove and set aside.
- In the same skillet, melt butter. Add sliced onions and cook until soft and golden, about 5 minutes.
- Add mushrooms and cook for another 5 minutes until tender and browned.
- Pour in chicken broth and let simmer for 3 minutes. Stir in heavy cream if using.
- Return chicken to skillet and spoon the mushroom-onion mixture over the top.
- Sprinkle with shredded Monterey Jack cheese.
- Transfer skillet to oven and bake for 10-12 minutes, until chicken is cooked through and cheese is melted and bubbly.
- Garnish with fresh parsley and serve hot.
