Ingredients
Scale
4 boneless, skinless chicken breasts
1 cup fresh spinach, chopped
½ cup cream cheese, softened
½ cup shredded mozzarella or cheddar cheese
2 garlic cloves, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
2 tablespoons olive oil
Optional substitutions:
For dairy-free: Use vegan cream cheese and plant-based cheese alternatives.
For gluten-free: No adjustments are necessary as the dish is naturally gluten-free.
Instructions
Step 1: Preheat and Prepare
Preheat your oven to 375°F (190°C).
Butterfly each chicken breast by slicing it horizontally, ensuring you don’t cut all the way through. This will create a pocket for the filling.
Step 2: Make the Filling
In a medium bowl, mix the chopped spinach, cream cheese, shredded mozzarella, garlic, Italian seasoning, salt, and pepper until well combined.
Step 3: Stuff the Chicken
Carefully spoon the filling into the pocket of each chicken breast. Secure the edges with toothpicks if necessary to keep the filling in place.
Step 4: Cook the Chicken
Heat the olive oil in a large oven-safe skillet over medium heat. Sear the stuffed chicken breasts for 3-4 minutes per side until golden brown.
Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F).
Step 5: Rest and Serve
Remove the chicken from the oven and allow it to rest for a few minutes before serving.
Notes
Use fresh spinach for the best flavor and texture, but if you’re short on time, frozen spinach (thawed and drained) can be used as well.
Season generously to enhance the flavor. Adding a pinch of chili flakes can give the dish a spicy kick!
Secure the stuffing with toothpicks to prevent any filling from escaping during cooking.
