  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • ½ cup cream cheese, softened
  • ½ cup shredded mozzarella or cheddar cheese
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional substitutions:
    • For dairy-free: Use vegan cream cheese and plant-based cheese alternatives.
    • For gluten-free: No adjustments are necessary as the dish is naturally gluten-free.

Instructions

Step 1: Preheat and Prepare

  • Preheat your oven to 375°F (190°C).
  • Butterfly each chicken breast by slicing it horizontally, ensuring you don’t cut all the way through. This will create a pocket for the filling.

Step 2: Make the Filling

  • In a medium bowl, mix the chopped spinach, cream cheese, shredded mozzarella, garlic, Italian seasoning, salt, and pepper until well combined.

Step 3: Stuff the Chicken

  • Carefully spoon the filling into the pocket of each chicken breast. Secure the edges with toothpicks if necessary to keep the filling in place.

Step 4: Cook the Chicken

  • Heat the olive oil in a large oven-safe skillet over medium heat. Sear the stuffed chicken breasts for 3-4 minutes per side until golden brown.
  • Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F).

Step 5: Rest and Serve

  • Remove the chicken from the oven and allow it to rest for a few minutes before serving.

Notes

  • Use fresh spinach for the best flavor and texture, but if you’re short on time, frozen spinach (thawed and drained) can be used as well.
  • Season generously to enhance the flavor. Adding a pinch of chili flakes can give the dish a spicy kick!
