Ingredients

  • Pumpkin Puree – 1 cup
  • Cream Cheese – 8 oz, softened
  • Maple Syrup – ¼ cup
  • All-Purpose Flour – 1 cup
  • Unsweetened Cocoa Powder – ½ cup
  • Granulated Sugar – 1 cup
  • Melted Butter – ½ cup
  • Eggs – 2 large
  • Vanilla Extract – 1 tsp
  • Baking Powder – ½ tsp
  • Salt – ½ tsp
  • Pumpkin Pie Spice – 1 tsp

Optional substitutions: Use gluten-free flour for a gluten-free version or substitute coconut sugar for a lower-glycemic option.

Instructions

Step 1: Preheat and Prepare

Start by preheating your oven to 350°F (175°C) and greasing an 8×8 inch baking dish.

Step 2: Mix the Cheesecake Swirl

In a medium bowl, blend the softened cream cheese, pumpkin puree, and maple syrup until smooth and creamy. This creates the creamy cheesecake layer with a subtle hint of maple flavor. Set this mixture aside.

Step 3: Prepare the Brownie Batter

In a separate bowl, whisk together the dry ingredients: flour, cocoa powder, sugar, baking powder, and salt. Then, add the melted butter, eggs, and vanilla extract, stirring until well combined and no lumps remain.

Step 4: Layer and Swirl

Pour half of the brownie batter into the prepared pan, spreading it evenly. Gently layer the pumpkin cheesecake mixture on top, followed by the remaining brownie batter. Use a knife to create a beautiful swirl pattern by lightly dragging it through the layers, giving the brownies a marbled look.

Step 5: Bake

Place the pan in the oven and bake for 30-35 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Let the brownies cool completely before slicing.

Notes

  • Swirling Technique: Don’t over-swirl the batter. A few passes with the knife will create the best visual effect without blending the layers too much.
  • Temperature Tip: Use room temperature cream cheese for a smoother swirl mixture. Cold cream cheese may result in a lumpy texture.
