Ingredients
Scale
6 chicken drumsticks (seasoned with a pinch of paprika for a smoky kick)
600g firm potatoes (like Amandine, peeled and quartered)
1 medium onion, finely sliced
10 sun-dried tomatoes in oil, chopped
100g Italian green olives
Salt and black pepper, to taste
Fresh rosemary sprigs
1 tsp sweet paprika
1 tsp smoked paprika (adds depth to the chicken flavor)
Olive oil
Optional Substitutions
Chicken: Substitute with boneless, skinless chicken thighs if preferred.
Potatoes: Sweet potatoes make an excellent alternative.
Olives: Black olives add a different flavor profile but can be substituted.
Rosemary: Fresh thyme works well if rosemary isn’t available.
Instructions
Step 1: Preheat and Prep the Potatoes
Preheat your oven to 230°C (446°F).
Prepare the potatoes: Peel and quarter the potatoes, placing them in a large mixing bowl. Add salt, pepper, rosemary, and a drizzle of olive oil. Mix until the potatoes are evenly coated.
Step 2: Season the Chicken
In a separate bowl, season the chicken drumsticks with sweet and smoked paprika. Add salt, pepper, and a light drizzle of olive oil. Massage the seasonings into the chicken for even flavor distribution.
Step 3: Arrange the Ingredients in the Baking Dish
In a baking dish, spread out the seasoned potatoes evenly. Place the chicken drumsticks on top of the potatoes for even cooking.
Cover the dish with parchment paper or aluminum foil to retain moisture during the initial baking stage.
Step 4: Bake the Dish
Bake in the preheated oven for about 40 minutes. Stir the potatoes and chicken halfway through to ensure even cooking.
Remove the parchment paper or foil, allowing the dish to crisp and brown beautifully.
Step 5: Add the Final Ingredients
About 5 minutes before finishing, add the chopped sun-dried tomatoes and Italian green olives over the chicken and potatoes. Let it bake for the remaining time.
Notes
Use Fresh Ingredients: Fresh rosemary and high-quality olive oil can elevate the flavors of this dish significantly.
Marinate the Chicken: For an added flavor boost, marinate the chicken for a couple of hours before cooking.
Add a Lemon Zest: For a burst of freshness, add lemon zest to the potatoes just before serving.
