- 3 2/3 cups lobster meat, cooked and chopped (about 1 lb 7 oz)
- 1/3 cup mayonnaise (about 3 oz)
- 1/4 cup celery, small diced (about 2 oz)
- 1 Tbsp tarragon, finely chopped
- 1 Tbsp lemon zest
- 24 mini croissants (Pillsbury™ Freezer-to-Oven Croissant Dough, 1.25 oz each)
- Fresh chives, finely chopped (for garnish, optional)
Instructions
- Bake croissants according to package instructions and let them cool completely.
- In a bowl, combine lobster meat and mayonnaise. Stir gently to coat.
- Add celery, tarragon, and lemon zest to the mix. Stir gently to preserve the lobster chunks. Chill until ready to use.
- Slice each croissant from the top down about three-quarters through, creating a pocket.
- Fill each croissant with about 1 ounce of the lobster mixture.
- Garnish with chopped chives and serve two sliders per portion.
Notes
- Lobster mixture can be made up to 24 hours in advance.
- Use gluten-free croissants or lettuce wraps for dietary alternatives.
- Don’t assemble rolls until just before serving to maintain croissant texture.
- Add a dash of hot sauce for a spicy twist.
