- For Grilled Chicken:
- 1 pound chicken breasts or tenders
- 2 teaspoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 2 teaspoons smoked paprika
- 1 teaspoon oregano
- 2 tablespoons lime juice
- 3 cloves garlic, minced
- For The Wrap:
- 4 – 10 inch tortillas
- 2 cups shredded lettuce
- 1 cup diced tomatoes
- ½ cup diced red onions
- 2 cups cheddar and pepper jack cheese, shredded
Instructions
Step 1: Prepare the Chipotle Mayo
- In a small bowl, mix together 1 cup of mayonnaise, 2 tablespoons of finely chopped chipotle in adobo sauce, and 1 tablespoon of lime juice. Season with salt and pepper to taste.
- Place in the refrigerator to chill until you’re ready to use it.
Step 2: Season the Chicken
- If the chicken breasts are thick, slice them into thin cutlets about ½ inch thick.
