  • For Chipotle Mayonnaise:
    • 1 cup mayonnaise
    • 2 tablespoons chipotle in adobo sauce, finely chopped
    • 1 tablespoon lime juice
    • Salt and pepper, to taste
  • For Grilled Chicken:
    • 1 pound chicken breasts or tenders
    • 2 teaspoons olive oil
    • 2 teaspoons garlic powder
    • 1 teaspoon onion powder
    • 2 teaspoons smoked paprika
    • 1 teaspoon oregano
    • 2 tablespoons lime juice
    • 3 cloves garlic, minced
  • For The Wrap:
    • 410 inch tortillas
    • 2 cups shredded lettuce
    • 1 cup diced tomatoes
    • ½ cup diced red onions
    • 2 cups cheddar and pepper jack cheese, shredded

Instructions

Step 1: Prepare the Chipotle Mayo

  1. In a small bowl, mix together 1 cup of mayonnaise, 2 tablespoons of finely chopped chipotle in adobo sauce, and 1 tablespoon of lime juice. Season with salt and pepper to taste.
  2. Place in the refrigerator to chill until you’re ready to use it.

Step 2: Season the Chicken

  1. If the chicken breasts are thick, slice them into thin cutlets about ½ inch thick.
  2. In a medium bowl, combine the chicken with 2 teaspoons of olive oil, 2 teaspoons garlic powder, 1 teaspoon onion powder, 2 teaspoons smoked paprika, 1 teaspoon oregano, 2 tablespoons lime juice, and 3 minced garlic cloves. Toss until well coated.

Step 3: Grill the Chicken

  1. Heat a grill or skillet over medium-high heat. Add a drizzle of olive oil if using a skillet.
  2. Cook the chicken for 3-4 minutes per side, or until the internal temperature reaches 165°F. Remove the chicken and let it rest for 10 minutes. Cut into bite-sized pieces.

Step 4: Assemble the Wrap

  1. Place a large 10-inch tortilla on a cutting board.
  2. Layer on shredded lettuce, diced tomatoes, diced red onions, and shredded cheddar and pepper jack cheese.

  4. Fold the sides of the tortilla in, and roll it up tightly.
