Ingredients
- 2 lbs chicken tenders, thighs, or breast (cut into 3″ pieces)
- 2 tbsp olive oil
- 1 stick butter
- 8–10 cloves garlic, minced
- ½ cup parmesan, grated
- 1 tbsp hot sauce (more if desired)
- 2 tsp red pepper flakes
- ⅓ cup fresh parsley, minced
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- ½ tsp pepper
Optional substitutions:
- Chicken substitute: For a vegetarian version, you can substitute chicken with firm tofu or plant-based chicken alternatives.
- Dairy-free: Swap the butter with a dairy-free alternative like margarine or coconut oil and use a vegan parmesan substitute.
Instructions
Step 1: Prepare the Skewers
- Soak wooden skewers in water for at least 30 minutes to prevent burning during cooking.
- In a bowl, combine chicken seasoning ingredients (paprika, garlic powder, onion powder, salt, and pepper).
- Toss the chicken pieces in olive oil and the spice mixture until fully coated.
Step 2: Assemble the Skewers
- Pack the seasoned chicken pieces tightly onto the soaked skewers, ensuring they are closely packed for juicy results.
Step 3: Make the Garlic Parmesan Butter Sauce
- In a saucepan over low heat, melt the butter and add the minced garlic, parmesan, hot sauce, red pepper flakes, and parsley.
- Scoop out ⅓ of the sauce for basting during cooking and reserve the rest for later use.
Step 4: Cooking the Chicken
- Air fryer method: Cook 2-3 skewers at 400°F for 5 minutes. Flip, baste with the reserved garlic parmesan sauce, and cook for an additional 7-9 minutes until the chicken reaches an internal temperature of 165°F.
- Oven method: Preheat the oven to 450°F, cook skewers for 14 minutes, flipping halfway and basting with sauce. Broil for 2 minutes at the end for a golden finish.
- Grill method: Grill the skewers over medium-high heat for 10-12 minutes, turning frequently and basting with sauce.
Notes
- Use fresh garlic for the best flavor. Minced garlic from a jar may save time but won’t offer the same aromatic punch.
- To make the chicken even more tender, marinate it in the seasoning and olive oil for an hour before skewering.
- If you prefer a spicier kick, feel free to add extra red pepper flakes or swap in a hotter variety of hot sauce.
