Ingredients
- 700g raw, peeled prawns
- 2 tsp chilli flakes
- 4 large garlic cloves, minced
- 1 lemon (zest and juice)
- 2–3 bird’s eye chillies (optional)
- 1 tbsp cake wheat flour
- 3 tbsp butter
- A few drops of vegetable oil
- 1 ½ cups fresh cream or milk
- 150g tagliatelle or any pasta of your choice
- ½ tbsp chopped parsley
Optional substitutions:
- For a lighter option, swap the fresh cream with whole milk or coconut cream.
- If you prefer a milder heat, omit the bird’s eye chillies.
Instructions
Step 1:
Start by prepping the prawns. Remove their shells and rub them with coarse salt, rinsing a few times to clean thoroughly. After cleaning, marinate the prawns with chilli flakes, bird’s eye chillies, garlic, lemon zest, lemon juice, and salt. Refrigerate for 30 minutes to allow the flavors to infuse.
Step 2:
In a large pot, cook the pasta according to the instructions on the packet. Be sure to add a generous amount of salt to the boiling water. Once cooked al dente, drain and reserve some pasta water for the sauce later. Return the pasta to the pot to keep it warm.
Step 3:
In a pan, heat 1 tbsp of butter with a few drops of vegetable oil. Flash fry the prawns in two batches, cooking each side for 30 seconds. The prawns should just turn pink. Remove and set aside.
Step 4:
To the same pan, melt the remaining butter and add 1 tbsp of flour. Cook the flour for about a minute to create a roux. Then, slowly add the cream or milk, stirring constantly until the sauce thickens. If the sauce becomes too thick, you can add some of the reserved pasta water to achieve the desired consistency.
Step 5:
Return the prawns to the pan, letting them heat through in the sauce for a minute. Finally, drizzle some lemon juice for a tangy kick.
Step 6:
Divide the pasta into serving bowls, and spoon the prawn sauce over the top. Garnish with chopped parsley and freshly grated parmesan if desired.
