Ingredients
- 4 (6-ounce) skinless, boneless chicken breast halves
- 2 tablespoons canola oil
- 1 cup Italian salad dressing
- 1 tablespoon chicken seasoning (such as Grill Mates® Montreal Chicken Seasoning)
- 1 tablespoon Italian herb seasoning
- 4 slices (1/2 inch thick) fresh mozzarella cheese
- 4 slices (1/2 inch thick) tomato
- 4 large fresh basil leaves
- 1 tablespoon balsamic vinegar

Instructions
Step 1: Marinate the Chicken
Place the chicken breasts in a resealable plastic bag and pour in the Italian salad dressing. Add the Italian herb seasoning and chicken seasoning. Knead the bag to ensure the chicken is well-coated with the marinade. Seal the bag, squeezing out excess air. Refrigerate for 4 to 6 hours to let the flavors meld.
Step 2: Prepare Your Skillet or Grill
Preheat your oven to 500°F (260°C). If using a grill, preheat to medium-high heat. In a large cast-iron or ovenproof skillet, heat the canola oil over medium-high heat until it shimmers.
Step 3: Cook the Chicken
Remove the chicken breasts from the marinade, discarding the used marinade. Place the chicken breasts into the hot oil or grill and sear for about 2 minutes on each side until browned.
Step 4: Finish in the Oven
Transfer the skillet to the preheated oven (or cover the grill). Bake for approximately 12 minutes or until the chicken is cooked through and juices run clear. For grill users, close the lid and cook for the same time.
Step 5: Top with Mozzarella and Tomato
Top each chicken breast with a slice of fresh mozzarella cheese and a slice of tomato. Return the skillet to the oven (or grill) for an additional 3 to 5 minutes, or until the cheese is melted.
Step 6: Serve and Garnish
Move the chicken breasts to a serving platter, garnish each with a fresh basil leaf, and drizzle with balsamic vinegar. Serve immediately.
