  • 1 pound smoked sausage, sliced
  • 4 cups baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese (or cheese blend)
  • 1/2 cup sour cream (optional, for serving)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Wash and cut baby potatoes into halves or quarters.
  3. Slice smoked sausage into 1/4-inch rounds.
  4. In a small bowl, combine ranch seasoning mix, garlic powder, onion powder, and black pepper.
  5. Toss potatoes in olive oil and half of the seasoning mix.
  6. Spread potatoes evenly on the baking sheet and scatter sausage slices over them. Sprinkle remaining seasoning.
  7. Roast for 35–40 minutes, flipping once halfway, until potatoes are golden and tender.
  8. Remove from oven, sprinkle cheese on top, and bake for 5 more minutes until cheese is melted and bubbly.
  9. Garnish with parsley and serve hot with sour cream if desired.

Notes

  • Use parchment paper for crispier potatoes and easier cleanup.
  • For a spicier version, add red pepper flakes or jalapeños.
