Ingredients
- 1 pound ground beef
- 1/2 cup water
- 2 tablespoons homemade taco seasoning (or store-bought as a substitute)
- 1 jar Tostitos Salsa Con Queso (15 oz)
- 1 can cream of potato soup
- 1 1/4 cups sour cream
- 1 1/4 cups beef broth (or 1 14.5-ounce can)
- 1/2 cup chicken broth
- 1/2 can fire-roasted diced green chiles
- 2–3 cups frozen corn (feel free to adjust quantity based on preference)
- 1/4 cup chopped fresh cilantro (plus more for garnish)
- 1 can black beans, drained
- Multigrain Tostitos Scoops Chips (for serving)
Optional Substitutions:
- For a lighter version, substitute ground turkey for beef.

Instructions
Step 1: Cook the Ground Beef
In a dutch oven, over medium-high heat, cook 1 pound of ground beef until it is almost completely browned, about 3 minutes.
Step 2: Season the Meat
Drain excess fat, if necessary. Add 1/2 cup water and 2 tablespoons of homemade taco seasoning. Reduce the heat to medium, and simmer until the liquid thickens slightly, stirring occasionally (about 2 minutes).
Step 3: Combine the Base Ingredients
In a large pot, add 1 jar of Tostitos Salsa Con Queso, 1 can of cream of potato soup, 1 1/4 cups of sour cream, 1 1/4 cups of beef broth, and 1/2 cup of chicken broth. Whisk to combine until smooth.
Step 4: Add Vegetables and Beans
Switch to a wooden spoon and stir in 1/2 can fire-roasted diced green chiles, 2-3 cups of frozen corn, 1 can of black beans (drained), and 1/4 cup of chopped fresh cilantro.
Step 5: Simmer and Serve
Bring the mixture to a gentle simmer over medium heat. Once simmering, reduce the heat to low and let it cook for an additional 30-60 minutes, stirring occasionally to ensure the flavors meld together perfectly.
