- 1 Tablespoon Unsalted Butter, or use ghee for Paleo & Whole30
- Zest and Juice of 2 Limes
- Cooked Rice, Quinoa, or Cauliflower Rice, for serving

Instructions
- In a small bowl, combine the paprika, dried parsley, oregano, chili powder, garlic powder, cumin, salt, pepper, and cayenne. Mix the spices thoroughly.
- Using 1 tablespoon of olive oil, brush the cod fillets. Then, rub the spice mixture evenly over the fillets, ensuring they’re fully coated.
- Allow the cod fillets to marinate in the refrigerator for at least 30 minutes. For a more intense flavor, you can let them marinate for up to 12 hours.
- Preheat the oven to 450ºF (232ºC).
- Place the cod fillets on a foil-lined baking sheet and roast them in the oven for 10-12 minutes. The cod should be opaque throughout and flake easily when done.
- In a small saucepan, melt the butter with the remaining tablespoon of olive oil. Add the lime zest and juice, swirling the pan to combine.
- Serve the cod fillets over your choice of rice, quinoa, or cauliflower rice. Drizzle the lime butter on top and pair with your favorite vegetables for a complete meal.
