Instructions

  1. Beat softened cream cheese until light and creamy. Add powdered sugar, vanilla extract, and cotton candy extract, mixing until smooth.
  2. Fold in whipped topping or heavy cream for a fluffy texture. Divide mixture into two portions, coloring one pink and one blue. Gently swirl together for a marbled effect and chill for 30 minutes.
  3. In another bowl, combine crushed graham crackers, sugar, and melted butter. Stir until evenly moistened. Press a thin layer of this mixture onto a lined tray and freeze for 10–15 minutes to firm.
  4. Using a small scoop, portion the chilled cheesecake filling into bite-sized balls. Press each lightly onto the cookie base so the crumbs adhere. Freeze 15–20 minutes until firm.
  5. In a shallow dish, combine pastel-colored sugar or crushed cotton candy candy. Roll each truffle until fully coated, pressing gently so the sugar adheres well.
