  • 2 cups rotisserie chicken, shredded
  • 1/2 cup salsa
  • 8 cups corn tortilla chips
  • 1 cup shredded cheddar cheese or Mexican blend cheese

  • 1 teaspoon cornstarch
  • 2 cups freshly grated medium cheddar cheese

Instructions

 

  1. Prepare the Chicken Mixture:
    • Preheat your oven to 350°F (175°C) and line a large baking sheet with aluminum foil or parchment paper.
    • In a medium-sized bowl, mix the shredded rotisserie chicken with the salsa until well combined. Set this mixture aside.
  2. Make the Cheese Sauce:
    • In a small pot, combine the half and half with the cornstarch, whisking until smooth.
    • Place the pot over medium-high heat and cook, stirring constantly, until the mixture is hot and begins to thicken.
    • Reduce the heat to low and gradually stir in the grated cheddar cheese until fully melted and smooth.
    • If using, add the hot sauce and salt to taste.
  3. Assemble the Nachos:
    • Spread half of the tortilla chips in an even layer on the prepared baking sheet.
    • Top with half of the chicken mixture, then drizzle half of the cheese sauce over the chicken.
    • Sprinkle with 1/2 cup of shredded cheese.
    • Repeat these layers with the remaining chips, chicken, cheese sauce, and shredded cheese.
  4. Bake:
    • Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the cheese is fully melted and bubbly.
