Whether you’re a fan of Mediterranean cuisine or simply looking to try something new, this dish will bring vibrant, fresh flavors to your table. Let’s dive into how to make this deliciously simple yet flavorful recipe!

Ingredients

Scale

  • 1 cup plus 2 Tbsp Plain Greek Yogurt
  • ½ Cucumber – grated
  • 2 to 3 Garlic Cloves, pressed
  • 2 Tbsp Olive Oil
  • 2 Tbsp Fresh Dill, chopped
  • Salt and Pepper to taste
  • 2 Cups chopped Cooked Chicken
  • 2 Cups chopped Romaine Lettuce
  • 1 Cup halved Grape Tomatoes
  • 1/2 Cup sliced Pepperoncini Peppers
  • 1/2 Cup sliced Kalamata Olives
  • 1/4 Cup chopped Red Onion
  • 1/2 Cup crumbled Feta Cheese

Instructions

  1. Prepare the Tzatziki: In a medium bowl, mix the Greek yogurt, grated cucumber, garlic, olive oil, and chopped fresh dill. Season with salt and pepper to taste, stirring until the mixture achieves a smooth, creamy consistency. This will be the heart of the dish, providing a tangy freshness that perfectly complements the other ingredients.
  2. Assemble the Salad: In a large salad bowl, toss together the chopped romaine lettuce, halved grape tomatoes, sliced pepperoncini peppers, Kalamata olives, and chopped red onion. Make sure everything is evenly distributed for the perfect bite in every forkful.
  3. Add the Chicken: Layer the chopped cooked chicken over the salad base. You can use rotisserie chicken to save time or grill your own for an extra touch of flavor.
  4. Dress with Tzatziki: Spoon generous amounts of the homemade tzatziki sauce over the salad and chicken, making sure to coat everything well with that rich, creamy goodness.
  5. Garnish: Finally, sprinkle crumbled feta cheese over the top of the salad to add the finishing touch. Serve immediately and enjoy this fresh, flavorful meal.

Notes

  • Make the tzatziki ahead of time: Preparing the tzatziki in advance allows the flavors to meld together even more. Store it in the refrigerator for up to two days before using it in the salad.
  • Control the garlic: If you’re not a fan of strong garlic flavors, start with one clove and add more according to taste. Fresh garlic can be quite potent in tzatziki.
