Ingredients

  • 1 tbsp olive oil
  • 1 onion, peeled and chopped
  • 2 cloves garlic, peeled and minced
  • 2 sprigs fresh thyme (or ½ tsp dried thyme)
  • 1 stick celery, sliced
  • 2 medium carrots, peeled and chopped
  • 2 medium potatoes, peeled and diced
  • 1 litre (4 cups) chicken stock (ideally homemade)
  • ½ tsp salt
  • ½ tsp black pepper
  • 400 g cooked cannellini beans, drained
  • 2 skinless chicken breasts, shredded
  • 100 g kale, chopped
  • Small bunch parsley, chopped
  • 2 tbsp grated Parmesan
  • To Serve: Fresh thyme, toasted granary bread

Instructions

Step 1: Sauté the Onion and Garlic

Heat olive oil in a large saucepan. Add the onion and sauté over low-medium heat for 10 minutes until softened. Stir in minced garlic and thyme, cooking for an additional 2 minutes.

Step 2: Add Vegetables and Stock

Add celery, carrots, and potatoes to the pan, stirring well. Pour in the chicken stock, seasoning with salt and pepper. Bring the mixture to a boil, then simmer for 20 minutes until the vegetables are tender.

Step 3: Add Cannellini Beans and Chicken

Stir in the drained cannellini beans, cooking for another 5 minutes. Add the shredded chicken and cook for 2-3 more minutes until heated through.

Step 4: Incorporate Kale and Finish

Add the chopped kale to the soup, cooking for 1-2 minutes until wilted. Taste the soup and adjust the seasoning if needed.

Step 5: Serve and Garnish

Divide the soup among four bowls. Garnish with fresh parsley, grated Parmesan, and thyme sprigs. Serve with toasted granary bread for a complete meal.

Notes

  • Use homemade chicken stock for deeper flavor, or opt for high-quality store-bought stock.
