Whether you’re making it for dinner or sharing it with friends, Taco Spaghetti is a quick and satisfying dish that’s perfect for any night of the week.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1/4 cup yellow onions, chopped
  • 1/4 cup taco seasoning (or 1 packet)
  • 1 (10 oz) can Rotel tomatoes (do not drain)
  • 8 oz spaghetti noodles (uncooked)
  • 3 cups water
  • 4 oz cheddar cheese, shredded
  • 1/2 cup chopped cilantro

Optional Substitutions:

  • Ground turkey can be used instead of beef for a leaner option.
  • If you’re looking for a gluten-free version, use gluten-free spaghetti noodles.
  • Vegan cheese can replace shredded cheddar for a dairy-free version.

Instructions

Step 1: Heat the Oil

In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned. Use a wooden spoon to break the meat apart into small pieces as it cooks. Once the beef is browned, add the chopped onions and cook until softened, about 3-5 minutes.

Step 2: Add Taco Seasoning and Rotel

Stir in the taco seasoning and Rotel tomatoes (with their juices). Mix well, making sure the seasoning is evenly distributed throughout the beef. Let it cook for 2-3 minutes, allowing the flavors to meld together.

Step 3: Add the Spaghetti and Water

Next, add the uncooked spaghetti noodles to the skillet, breaking them in half if necessary. Pour in 3 cups of water and stir to combine. Bring the mixture to a boil over medium-high heat.

Step 4: Simmer the Dish

Once it reaches a boil, reduce the heat to low and cover the skillet. Let it simmer for about 12-15 minutes, stirring occasionally, until the spaghetti is cooked and the liquid is mostly absorbed.

Step 5: Add Cheese and Garnish

Once the pasta is cooked, remove the skillet from heat and stir in the shredded cheddar cheese. Let the cheese melt and combine into the dish. Garnish with freshly chopped cilantro for a burst of color and freshness. Serve hot!

Notes

  • Add Spice: If you like extra heat, consider adding a chopped jalapeño or a dash of hot sauce to the beef mixture.
  • Vegetable Boost: Add some chopped bell peppers or corn to the beef for added texture and flavor.
  • Cheese Variations: Swap the cheddar for a Mexican blend or Monterey Jack for a creamier flavor.
