Taco Ranch Bites are crispy, cheesy, bite-sized appetizers made with seasoned ground beef, cheddar cheese, ranch dressing, and phyllo shells — perfect for parties, game day, or quick snacks.

- 1 lb lean ground beef
- 1 package (1 oz) taco seasoning mix
- 1 can (10 oz) diced tomatoes with green chiles, with juices
- 2 cups sharp cheddar cheese, grated
- 1 bottle (8 oz) ranch dressing
- 5 packages (15 count each) frozen phyllo cup shells
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Add taco seasoning and diced tomatoes with green chiles (including juices). Simmer for 5 minutes.
- In a large bowl, mix cheddar cheese and ranch dressing.
- Stir in the seasoned beef mixture until well combined.
- Spoon the filling into each frozen phyllo cup shell.
- Bake for 10–13 minutes if frozen, or 8–10 minutes if thawed, until filling is hot and shells are golden.
- Cool slightly and serve warm.
Notes
- Phyllo shells do not need to be thawed before baking.
- Freeze unbaked bites in advance for quick prep later.
- Try different cheeses like pepper jack for a spicy kick.
- Top with chopped tomatoes, cilantro, or sour cream for extra flavor.
- Makes approximately 75 mini bites — ideal for large gatherings.
