Ingredients
Scale
1 pound Sweet Potatoes (700g), peeled and diced
2 large Carrots, finely chopped
1 medium-sized Yellow Onion, finely chopped
1 inch Ginger, minced
2 cloves Garlic, minced
1 teaspoon Smoked Paprika
1 teaspoon Red Pepper Flakes
4 cups Low-Sodium Vegetable Broth
Salt and Ground Black Pepper, to taste
Olive Oil, for sautéing
Coconut Cream, for garnish
Fresh Basil Leaves, for garnish
Optional Substitutions:
For a creamier texture, use cashew cream instead of coconut cream.
Add a squeeze of lime juice for a citrusy zing.
Replace vegetable broth with chicken broth if not vegan.
Instructions
Step 1: Sauté the Ingredients
Set the instant pot to sauté mode. Add a drizzle of olive oil and let it heat until it shimmers.
Add in the onions, carrots, ginger, and garlic. Sauté for about 4-5 minutes until fragrant and the onions become translucent.
Step 2: Add Spices and Sweet Potatoes
Sprinkle in the smoked paprika and red pepper flakes, stirring constantly to toast the spices.
Add the diced sweet potatoes and cook for an additional 2-3 minutes, allowing the flavors to meld.
Step 3: Pressure Cook
Pour in the vegetable broth. Give everything a good stir, making sure no bits are sticking to the bottom.
Seal the lid and set the instant pot to pressure cook on high for 4 minutes. Once the cooking time is up, perform a quick release to safely remove the steam.
Step 4: Blend to Perfection
Using a stick blender, blend the soup until smooth. If you prefer a chunkier texture, pulse the blender a few times until the desired consistency is achieved.
Alternatively, transfer the soup to a traditional blender in batches and blend until creamy.
Step 5: Serve and Garnish
Ladle the soup into serving bowls. Top each with a swirl of coconut cream and a few fresh basil leaves for a pop of color and flavor.
Notes
Roast the sweet potatoes: For a deeper flavor, roast the sweet potatoes in the oven before adding them to the soup.
Add protein: Boost the nutritional value by adding a can of drained chickpeas or lentils.
Use fresh herbs: Fresh thyme or rosemary can elevate the flavor profile of this soup.
