This dish is packed with vibrant flavors, tender chicken, and a gooey cheesy filling that will have everyone coming back for more. Let’s dive in!
Ingredients
Scale
4 boneless, skinless chicken breasts
1 cup roasted red peppers, sliced
1 cup fresh spinach
1 cup shredded mozzarella cheese
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
Prepare the chicken: Using a sharp knife, make a deep cut along the side of each chicken breast to create a pocket, being careful not to cut all the way through.
Stuff the chicken: Fill each pocket with equal amounts of roasted red peppers, spinach, and shredded mozzarella cheese. Secure the chicken with toothpicks if necessary.
Season the chicken: In a small bowl, mix together the olive oil, garlic powder, Italian seasoning, salt, and pepper. Brush this mixture over both sides of the stuffed chicken breasts.
Bake the chicken: Place the chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center.
Notes
Secure the filling: Use toothpicks to prevent the filling from spilling out while baking.
Keep the chicken moist: Brushing the chicken with olive oil not only adds flavor but also keeps the chicken juicy during baking.
Use fresh ingredients: Fresh spinach and high-quality mozzarella will enhance the flavor and texture of the dish.
