Description

Strawberry Shortcake Cheesecake Bars combine creamy cheesecake, a golden Oreo crust, real strawberries, and a strawberry crumble topping for the ultimate dessert bar experience.

Ingredients

Scale
  • 2 cups crushed golden Oreos
  • 5 tablespoons unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
  • 1 cup diced fresh strawberries
  • 1 cup strawberry preserves
  • 1/2 cup crushed freeze-dried strawberries
  • 1/2 cup crushed vanilla wafers
  • 2 tablespoons unsalted butter, melted (for crumble)

Instructions

  1. Preheat oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper, leaving overhangs on the sides.
  2. In a bowl, mix crushed golden Oreos with melted butter. Press into the prepared pan to form the crust. Bake for 8 minutes and set aside to cool.
  3. In a large bowl, beat the cream cheese until smooth. Add sugar, vanilla, and sour cream, mixing until combined. Add eggs one at a time, mixing well after each.
  4. Spread the cheesecake mixture over the cooled crust evenly.
  5. Gently swirl in the strawberry preserves and fold in the diced strawberries.
  6. In a separate bowl, mix crushed freeze-dried strawberries, crushed vanilla wafers, and melted butter to create a crumble topping. Sprinkle over the cheesecake layer.
  7. Bake for 35–40 minutes until the center is set and top is lightly golden.
  8. Cool completely, then refrigerate for at least 3 hours before slicing into bars.
