  • Handful Fresh Cilantro (stems removed, chopped)
  • Pinch of Sea Salt

For the Salad Base:

  • Arugula and/or Iceberg Lettuce
  • Cherry Tomatoes (halved)
  • Mini Sweet Peppers (sliced)
  • Roasted or Grilled Corn (1 cup)
  • Fresh Cilantro Leaves
  • Sliced Avocado
  • Lime Wedges

Optional Substitutions:

  • Replace shrimp with tofu or chicken for a different protein option.
  • For a vegan alternative, substitute honey in the dressing with maple syrup.
  • Gluten-free: Ensure seasonings and sauces used are labeled gluten-free.

Instructions

Step 1: Preparing the Shrimp

  1. Preheat the oven to 400°F.
  2. Rinse and Drain the thawed shrimp thoroughly.
  3. In a large bowl, toss the shrimp with olive oil, chili powder, garlic powder, cumin, onion powder, salt, and pepper until fully coated.
  4. Spread the seasoned shrimp on a rimmed baking sheet.
  5. Bake for 8-10 minutes, or until the shrimp turn pink and form a loose ‘C’ shape.

Step 2: Making the Cilantro Lime Dressing

  1. In a small bowl, whisk together the lime juice, lime zest, olive oil, chopped cilantro, and a pinch of salt.
  2. Whisk for 1-2 minutes until the dressing is emulsified and the flavors blend together.

Step 3: Assembling the Salad Base

  1. In a large salad bowl, combine arugula, halved cherry tomatoes, sliced mini peppers, and roasted corn.
  2. Gently mix in the cilantro leaves.

Step 4: Bringing it All Together

  1. Top the salad base with the freshly baked shrimp, avocado slices, and lime wedges.
  2. Drizzle the cilantro lime dressing over the entire bowl.
  3. Garnish with extra cilantro and serve immediately!

Notes

  1. Use Fresh Ingredients: Freshly squeezed lime juice and chopped cilantro elevate the flavors of the dressing.
  2. Adjust the Spice Level: If you prefer a milder taste, reduce the chili powder or replace it with smoked paprika.
  3. Perfect Shrimp Texture: Avoid overcooking the shrimp. They should be tender and form a loose ‘C’ shape when done.
