Spicy Garlic Shrimp Linguine Recipe

  • 300 g ( lb) raw prawns (shrimp), thawed, peeled, deveined
  • 300 g ( lb) linguine or spaghetti
  • 500 g (1 lb) fresh tomatoes, diced (~4 large, ripe)
  • 1 cup fresh parsley, finely chopped
  • 1 tablespoon tomato paste
  • 2 cloves garlic, minced
  • ½ tablespoon dried chilli flakes (adjust to taste)
  • 1 teaspoon brown sugar
  • Salt and pepper to taste
  • 2 tablespoons olive oil (optional: extra to serve)

Prawn (Shrimp) Seasoning:

  • 1 clove garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon paprika (sweet or smoky)
  • 1 tablespoon olive oil

To Serve (Optional):

  • Fresh parsley, finely chopped
  • Chilli flakes
  • Extra virgin olive oil
  • Parmesan cheese

Instructions

 

  1. Season the prawns. Combine the prawns with the prawn seasoning ingredients: garlic, salt, black pepper, paprika, and olive oil. Mix well and set aside to let the flavors infuse.
  2. Cook the linguine. In a large pot, cook the linguine according to the packet instructions. Make sure to generously season the water with salt to enhance the pasta’s flavor. Cook the pasta until it’s al dente, which should take around 8–10 minutes.
  3. Sear the prawns. While the pasta is cooking, heat a large frying pan over high heat (no need to add oil since the prawns are already seasoned with olive oil). Sear the prawns for 1 minute per side until they are golden and just cooked through. Remove them from the pan and set aside.
  4. Make the sauce. In the same pan, add the olive oil, minced garlic, and tomato paste. Stir over medium heat until the garlic is fragrant and lightly golden, about 1 minute.
  5. Simmer the tomatoes. Add the diced tomatoes, dried chilli flakes, brown sugar, salt, and pepper to taste. Lower the heat to a simmer and cook with the lid on for about 10 minutes, allowing the sauce to thicken and the tomatoes to break down.
  6. Combine and serve. Once the sauce is ready, return the prawns to the pan along with the chopped parsley. Mix well over low heat, then immediately add the drained pasta and about ½ cup of the pasta cooking water. Toss the pasta through the sauce until evenly coated. Serve immediately, garnished with extra olive oil, fresh parsley, Parmesan cheese, and chilli flakes if desired.

Notes

  • Control the heat. If you prefer a milder dish, reduce the amount of chilli flakes or omit them altogether. On the other hand, for those who love a fiery kick, feel free to add more!
  • Cook the pasta al dente. Al dente pasta has a firmer texture, which pairs nicely with the tender shrimp. Be sure to taste the pasta as it cooks and remove it from the water when it still has a slight bite.
  • Make it gluten-free. You can easily substitute the linguine with your favorite gluten-free pasta.
