Ingredients
- 3 tbsp toasted sesame oil (divided)
- 3.3 ounces shiitake mushrooms (torn into pieces)
- 4 garlic cloves (grated)
- 1 tbsp fresh ginger (grated)
- 4 cups chicken or vegetable broth
- ½ tsp ground turmeric
- ½ tsp brown sugar
- 2 tbsp low-sodium soy sauce
- 1 tbsp fish sauce
- 1 tbsp sambal oelek or other chili paste (adjust to taste)
- 2 tbsp mild red curry paste
- 1 can (14 oz) unsweetened coconut milk (full-fat for creaminess)
- 1 tbsp fresh lime juice
- 9 ounces instant ramen noodles
- Chili oil, for serving
- Sesame seeds, for serving
- Chopped chives, for serving
- 4 soft-boiled eggs (cooked for 7 minutes)

Instructions
Step 1: Prep Your Ingredients
Grate the garlic and ginger, and tear the shiitake mushrooms into bite-sized pieces. Having everything prepped makes cooking quick and easy.
Step 2: Sauté the Shiitakes
In a large pot, heat 1 tablespoon of toasted sesame oil over medium heat. Add the shiitake mushrooms, cooking until they begin to brown. Add another tablespoon of sesame oil, season with salt and pepper, and continue cooking until the mushrooms are crispy. Remove from the pot and set aside.
Step 3: Build the Broth
Lower the heat and add 1 more tablespoon of sesame oil to the pot. Add the grated garlic and ginger, cooking until fragrant—about 1 minute. Deglaze the pot with your choice of chicken or vegetable broth, making sure to scrape up any brown bits from the bottom. Bring the mixture to a boil.
