Ingredients
- 2 tubes of squid (fresh or frozen, cleaned)
- 3 tbsp extra virgin Spanish olive oil (divided)
- 1 Spanish pepper (mild hot, deseeded and thinly sliced)
- 4 cloves of garlic (thinly sliced)
- 3 tbsp white wine (dry)
- Pinch of sea salt
- Freshly cracked black pepper
- 2 tbsp freshly chopped parsley
- Fresh lemon wedges (for serving)
Optional Substitutions:
- Use coconut oil instead of olive oil for a subtle tropical twist.
- Swap white wine with chicken broth if you prefer a non-alcoholic version.
- For a spicier kick, add red chili flakes or use a hotter pepper variety.
Instructions
Step 1: Preparation of the Squid
- If using frozen squid tubes, thaw them out completely. Rinse under cold water and pat dry.
- Using a sharp knife, score each squid tube diagonally in both directions, creating a crisscross pattern. Note: Do not cut all the way through; the scoring should be shallow to allow flavors to penetrate.
Step 2: Seasoning the Squid
- Rub each squid tube with 1 tbsp of olive oil and season with a pinch of sea salt and freshly cracked black pepper on both sides.
Step 3: Cooking the Squid
- Heat a non-stick frying pan over medium-high heat. Once hot, place the squid tubes scored side down.
- Sear the squid for 60-90 seconds, then flip and cook for another 60-90 seconds.
- Remove the squid from the pan and set aside on a plate.
Step 4: Preparing the Spicy Garlic Sauce
- In the same pan, add 2 tbsp of olive oil, followed by the sliced garlic and Spanish pepper. Cook for about 1 minute, stirring occasionally.
- Pour in 3 tbsp of white wine and let it simmer for 2 minutes until the sauce reduces slightly.
- Squeeze in the juice of a lemon wedge (approximately 1 tsp), add 1 tbsp of freshly chopped parsley, and season with salt and pepper to taste.
Step 5: Serving
- Drizzle the garlic sauce over the cooked squid steaks.
- Garnish with additional lemon wedges and parsley.
- Serve immediately and enjoy your Spanish Style Squid Steaks with Spicy Garlic Sauce!

- Always pat the squid dry: Ensuring the squid is completely dry before cooking will help achieve a nice sear and prevent it from becoming rubbery.
- Use fresh garlic: Freshly sliced garlic imparts a sweeter and more potent flavor compared to pre-minced varieties.
- Do not overcook: Squid cooks quickly; overcooking will result in a chewy texture. Stick to the recommended cooking times for the best results.
