For the Spice Rub:

  • 1 ½ teaspoons salt
  • ¼ teaspoon freshly ground black pepper
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon cumin

For the Chicken:

  • 1 pound chicken tenders
  • 1 tablespoon avocado oil

For the Slaw:

  • 2 cups shredded red cabbage
  • 2 cups shredded green cabbage
  • ¼ cup thinly sliced red onion
  • ¼ cup chopped fresh cilantro
  • 2 tablespoons Southwest dressing
  • 1 lime, squeezed

For the Wraps:

  • 4 burrito-sized tortillas (we recommend Siete Foods Cassava Flour Tortillas)
  • 4 tablespoons Southwest dressing
  • 2 large avocados, sliced
  • 1 cup shredded goat cheddar cheese
  • Tortilla chips (such as Siete Foods Totopos Tortilla Chips)

Instructions

Step 1: Prepare the Spice Rub

In a small bowl, mix together the salt, pepper, chili powder, garlic powder, dried oregano, paprika, and cumin. Reserve 1 teaspoon of the mixture for the slaw.

Step 2: Season the Chicken

Pat the chicken dry using paper towels and season it generously with the spice rub. Make sure all sides are evenly coated for maximum flavor.

Step 3: Cook the Chicken

Heat a large skillet over medium heat. Add the avocado oil and once it’s hot, cook the chicken tenders on one side for about 3 minutes. Flip them and cook for an additional 2-3 minutes, reducing the heat to low. Continue flipping occasionally until the chicken is fully cooked and charred in some spots. Allow the chicken to rest for at least 5 minutes before slicing it into bite-sized pieces.

Step 4: Make the Slaw

In a medium bowl, add the reserved spice rub. Then, toss in the shredded red and green cabbage, red onion, cilantro, Southwest dressing, and freshly squeezed lime juice. Mix well and taste for seasoning, adjusting as necessary.

Step 5: Assemble the Wraps

Warm the tortillas until they are pliable. Spread 1 tablespoon of Southwest dressing in the center of each tortilla, followed by a scoop of slaw. Add sliced chicken, avocado slices, ¼ cup goat cheddar cheese, and crushed tortilla chips. Roll the wraps tightly, slice them in half, and enjoy!
