Ingredients

Scale

  • For the Chicken:
    • ¾ lb boneless, skinless chicken breasts, diced
    • ¼ cup lime juice (about one lime)
    • ½ tsp chili powder
    • ½ tsp onion powder
    • 1 tsp garlic powder
    • ½ tsp smoked paprika
    • ¼ tsp salt (more to taste)
    • 3 tbsp olive oil
    • 1 tbsp chipotle pepper in adobo sauce
  • For the Southwest Wrap:
    • 4 large tortillas
    • 1 cup uncooked rice (cook according to package instructions)
    • 1 small red bell pepper, chopped
    • 1 jalapeño, chopped
    • ½ red onion, sliced
    • 3 garlic cloves, minced
    • 1 tsp olive oil for sautéing
    • ¾ cup corn kernels (thawed or fresh)
    • 1 cup black beans, drained and rinsed
    • ¼ cup crumbled cotija cheese
  • For the Southwest Crema:
    • ⅓ cup sour cream
    • 1 ½ tbsp honey
    • ½ to 1 tbsp chipotle peppers in adobo
    • 1 tbsp lime juice
    • 3 tbsp fresh cilantro, chopped
    • 1 to 2 tbsp water to thin the crema (optional)
    • ¼ tsp salt

Optional Substitutions:

  • For a dairy-free option, use a vegan sour cream or yogurt in the crema.
  • Swap the cotija cheese with feta or a vegan cheese alternative.
  • Use brown rice or quinoa for a higher fiber content.

Instructions

Step 1: Marinate the Chicken

Pat the chicken dry and dice into bite-sized pieces. In a large bowl, combine the lime juice, chili powder, onion powder, garlic powder, smoked paprika, salt, and chipotle pepper. Add olive oil and stir well. Toss the chicken pieces to ensure they are fully coated. Let the chicken marinate for at least 15 minutes or up to 24 hours for deeper flavor.

Step 2: Prepare the Rice and Vegetables

While the chicken marinates, cook the rice according to the package instructions. Slice the red bell pepper, jalapeño, and red onion, and mince the garlic. In a separate skillet, heat 1 tsp olive oil and sauté the vegetables until tender, about 8 minutes. Add the minced garlic and sauté for an additional minute. Set aside.

Step 3: Cook the Chicken

In a large skillet over medium heat, add the marinated chicken and sauté for 12-15 minutes, or until the chicken is cooked through and no longer pink in the center. Set the cooked chicken aside, keeping it warm.

Step 4: Assemble the Wraps

Warm the tortillas either in a dry skillet or microwave. Begin assembling the wraps by layering the rice, chicken, sautéed veggies, corn, black beans, and cotija cheese. Drizzle the Southwest crema generously over the ingredients. Roll the tortilla tightly like a burrito, tucking in the sides as you go.

Notes

  • Use Fresh Ingredients: Freshly chopped veggies and herbs can elevate the flavor profile of the dish.
  • Customize Your Spice Level: Add extra jalapeño or chipotle pepper if you prefer a spicier kick, or use milder options for a family-friendly meal.
  • Perfecting the Wrap: Be sure not to overfill the tortillas to prevent tearing. A warm tortilla is more pliable and easier to fold.
