3 tbsp olive oil
1 tbsp chipotle pepper in adobo sauce
For the Wrap Filling
4 large tortillas (whole wheat, flour, or gluten-free)
1 cup uncooked rice (white or brown)
1 small red bell pepper (sliced)
1 jalapeño (optional, for extra spice)
½ red onion (thinly sliced)
3 garlic cloves (minced)
¾ cup corn kernels (fresh or thawed frozen)
1 cup black beans (rinsed and drained)
¼ cup cotija cheese (or feta)
For the Southwest Crema (Sauce)
⅓ cup sour cream (or Greek yogurt for a healthier option)
1½ tbsp honey
½ – 1 tbsp chipotle peppers in adobo
1 tbsp lime juice
3 tbsp fresh cilantro (chopped)
1–2 tbsp water (to thin the sauce if needed)
¼ tsp salt
Instructions
Step1: Marinate the Chicken
Pat the chicken dry and dice it into bite-sized pieces.
In a bowl, mix lime juice, oil, seasonings, and chipotle peppers in adobo sauce.
Coat the chicken well and let it marinate for at least 15 minutes (or up to 24 hours for deeper flavor).
Step2: Cook the Chicken
Heat a large skillet over medium heat.
Add the marinated chicken and sauté for 12-15 minutes until fully cooked.
Remove from the pan and set aside.
Step3: Prepare the Wrap Ingredients
