Let’s dive into this savory classic that’s sure to please your family.

Ingredients

Scale

  • 1 ½ lbs Boneless, skinless chicken breasts – tender and juicy when slow-cooked.
  • ½ cup low sodium chicken broth – keeps the chicken moist and adds flavor.
  • 1 tsp salt – essential for seasoning.
  • ½ tsp ground black pepper – for that perfect balance of heat.
  • ¼ tsp dried thyme and ¼ tsp dried rosemary – gives the dish a fragrant, herbal taste.
  • 1 tsp onion powder – adds a subtle onion flavor.
  • 2 (10.5 oz) cans cream of chicken soup – the base of the creamy sauce.
  • 3 medium Yukon gold potatoes (diced) – hearty and filling.
  • 3 tsp garlic – for a deeper, savory flavor.
  • 1 (12 oz) bag frozen mixed vegetables – a colorful and healthy addition.
  • ½ cup sour cream – adds tanginess to the creamy sauce.
  • 1 (16 oz) can Grands biscuits (8 count Pillsbury Grands) – flaky and buttery to top the dish.

Optional Substitutions:

  • Replace cream of chicken soup with a dairy-free alternative for those who are lactose intolerant.
  • Swap chicken breasts for chicken thighs if you prefer a richer flavor.

Instructions

Step 1:
Place your chicken in a 6-quart slow cooker and pour the chicken broth over the top.

Step 2:
Season the chicken with salt, pepper, thyme, rosemary, and onion powder for maximum flavor.

Step 3:
Pour the cream of chicken soup over the chicken. Then, add diced potatoes, garlic, and mixed vegetables.

Step 4:
Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours. This allows all the flavors to meld together.

Step 5:
Once done, remove the chicken and shred it with two forks. Stir the shredded chicken back into the pot and mix in the sour cream.

Step 6:
Prepare your Pillsbury Grands biscuits according to the instructions on the package.

Step 7:
Serve the slow cooker chicken pot pie with a biscuit on top and enjoy!

Notes

  • Use fresh herbs: Fresh thyme and rosemary can enhance the flavor significantly.
  • Prevent sogginess: For crispier biscuits, bake them separately and add them on top just before serving.
  • Thickening the sauce: If you prefer a thicker sauce, add a tablespoon of flour or cornstarch mixed with water into the pot during the last 30 minutes of cooking.
