Ingredients
Scale
1 pound boneless skinless chicken breasts
(2) 10.75 ounce cans of cream of chicken soup
1 cup salsa – Use your favorite brand; mild, medium, or hot.
2 cups frozen corn
(1) 15-ounce can of black beans, drained and rinsed
1 1/2 cups chicken broth
1 teaspoon ground cumin – Adds depth and earthy flavor.
1/2 teaspoon dried cilantro
1 cup shredded cheddar cheese
Optional Toppings:
Diced tomatoes
Chopped fresh cilantro
Tortilla strips
Diced red onion
Diced green bell pepper
Lime wedges
Instructions
Step 1: Prepare the Slow Cooker
Spray your slow cooker with non-stick cooking spray. This step will help prevent sticking and make cleaning up much easier.
Step 2: Add the Chicken
Place the boneless, skinless chicken breasts at the bottom of the slow cooker.
Step 3: Combine the Ingredients
In a medium mixing bowl, combine the cream of chicken soup, salsa, corn, black beans, chicken broth, cumin, and dried cilantro. Mix thoroughly.
Step 4: Pour Over the Chicken
Pour the mixture over the chicken breasts in the slow cooker.
Step 5: Set and Cook
Cover and cook on low for 4-6 hours or on high for 2-3 hours. This allows the flavors to meld together while keeping the chicken moist and tender.
Step 6: Shred the Chicken
Once cooked, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker.
Step 7: Add Cheese
Add the shredded cheddar cheese to the soup and stir. Continue cooking for an additional 15 minutes, or until the cheese is melted.
Step 8: Serve and Enjoy!
Top with your favorite toppings such as tortilla strips, diced tomato, chopped red onion, and fresh cilantro. Serve with lime wedges for an extra zesty finish.
Notes
Use Fresh Ingredients: Freshly chopped cilantro and lime juice can elevate the flavors significantly.
Make it Spicier: Add chopped jalapeños or a pinch of cayenne pepper for an extra kick.
Slow Cook for Richer Flavor: Cooking on low for a longer time allows the spices to deeply infuse into the soup.
