Ingredients

Scale

For the Shrimp:

  • 1 pound shrimp, peeled and deveined
  • 1 teaspoon coconut sugar
  • 1 teaspoon lime zest
  • ½ teaspoon chipotle powder
  • ½ teaspoon paprika
  • ¼ teaspoon cumin
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

For the Bowls:

  • 1 batch Cilantro Lime Coconut Rice (see instructions below)
  • Shredded romaine lettuce
  • 1 avocado, sliced
  • Pico de gallo (store-bought or homemade)
  • Sour cream or Greek yogurt
  • Sliced radishes
  • Fresh cilantro, for garnish

Optional Substitutions:

  • Swap shrimp for grilled chicken or tofu for a vegetarian version.
  • Use quinoa instead of rice for a gluten-free option.
  • Try a dairy-free yogurt as a substitute for sour cream.

Instructions

Step 1: Prep the Shrimp

In a small bowl, combine the coconut sugar, lime zest, chipotle powder, paprika, cumin, salt, and pepper. Pat the shrimp dry with a paper towel and toss them in the seasoning mix until evenly coated.

Step 2: Cook the Shrimp

Heat a large skillet over medium heat and add olive oil. Once the oil is hot, add the shrimp in a single layer. Cook for 2-3 minutes on each side, or until the shrimp is opaque and has a nice pink hue around the edges. Remove from heat and set aside.

Step 3: Prepare the Cilantro Lime Coconut Rice

To make the Cilantro Lime Coconut Rice, cook 1 cup of rice with 1 cup of coconut milk and 1 cup of water. Once cooked, fluff the rice with a fork and stir in fresh cilantro, lime juice, and a pinch of salt.

Step 4: Assemble the Bowls

In serving bowls, start with a generous scoop of cilantro lime rice. Top with the cooked shrimp, shredded romaine lettuce, slices of avocado, pico de gallo, and radishes. Finish with a dollop of sour cream or Greek yogurt and garnish with fresh cilantro.

Notes

1. Use Fresh Ingredients: Fresh shrimp, ripe avocados, and vibrant vegetables will take your Shrimp Burrito Bowls to the next level. Always opt for fresh lime juice and cilantro for the best flavor.

2. Spice Adjustments: If you prefer a spicier bowl, feel free to increase the amount of chipotle powder or add sliced jalapeños to the toppings.

3. Make Ahead: You can prep the ingredients ahead of time for a quick weeknight dinner. Cook the shrimp and rice in advance, and assemble the bowls just before serving.

4. Customize Your Bowl: Burrito bowls are versatile. Add black beans, grilled corn, or cheese for extra flavor and texture.
