Instructions

Step 1: Prepare the Meat Filling

  1. Brown the Meat: In a large skillet, heat a tablespoon of oil over medium-high heat. Add the ground lamb or beef and cook until browned, breaking up any clumps with a wooden spoon. Drain excess fat if necessary.
  2. Add the Vegetables: Stir in the diced onions, garlic, and carrots, cooking for about 5 minutes or until the vegetables soften.
  3. Incorporate the Seasonings: Add the tomato paste, Worcestershire sauce, thyme, and rosemary. Stir until everything is combined.
  4. Simmer: Pour in the beef broth and simmer for 10 minutes. This will allow the flavors to meld and the liquid to reduce slightly.

Step 2: Prepare the Mashed Potatoes

  1. Boil the Potatoes: In a large pot, boil the potatoes in salted water until tender, about 15 minutes.
  2. Mash: Drain the potatoes and return them to the pot. Add butter, milk, and season with salt and pepper. Mash until smooth and creamy.

Step 3: Assemble the Shepherd’s Pie

  1. Layer the Meat: Spread the meat and vegetable mixture evenly in a baking dish.
  2. Top with Potatoes: Spoon the mashed potatoes on top, spreading them out evenly. For an extra golden, crispy top, sprinkle a cup of shredded cheese over the mashed potatoes.
