Welcome, food lovers! If you’re searching for a hearty and comforting meal that brings warmth to the table, look no further than the classic Shepherd’s Pie recipe. With tender meat, creamy mashed potatoes, and a blend of flavorful vegetables, this dish is sure to please. Shepherd’s Pie, or Cottage Pie as it’s sometimes called, has a rich tradition rooted in British and Irish cuisine. It’s the perfect dinner to make when you need something easy yet satisfying.
Ingredients
Scale
- 1 lb ground lamb or beef (lamb is traditional for Shepherd’s Pie, but beef works just as well)
- 1 large onion, finely diced
- 2 cloves garlic, minced
- 2 large carrots, diced
- 1 cup frozen peas (optional)
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 cup beef broth
- 4–5 large potatoes, peeled and quartered
- 4 tablespoons butter
- ½ cup milk or heavy cream
- Salt and pepper to taste
- 1 teaspoon dried thyme (or fresh thyme, chopped)
- 1 teaspoon dried rosemary (optional)
- 1 cup shredded cheese (optional, for topping)
Instructions
Step 1: Prepare the Meat Filling
- Brown the Meat: In a large skillet, heat a tablespoon of oil over medium-high heat. Add the ground lamb or beef and cook until browned, breaking up any clumps with a wooden spoon. Drain excess fat if necessary.
- Add the Vegetables: Stir in the diced onions, garlic, and carrots, cooking for about 5 minutes or until the vegetables soften.
- Incorporate the Seasonings: Add the tomato paste, Worcestershire sauce, thyme, and rosemary. Stir until everything is combined.
- Simmer: Pour in the beef broth and simmer for 10 minutes. This will allow the flavors to meld and the liquid to reduce slightly.
Step 2: Prepare the Mashed Potatoes
- Boil the Potatoes: In a large pot, boil the potatoes in salted water until tender, about 15 minutes.
- Mash: Drain the potatoes and return them to the pot. Add butter, milk, and season with salt and pepper. Mash until smooth and creamy.
Step 3: Assemble the Shepherd’s Pie
- Layer the Meat: Spread the meat and vegetable mixture evenly in a baking dish.
- Top with Potatoes: Spoon the mashed potatoes on top, spreading them out evenly. For an extra golden, crispy top, sprinkle a cup of shredded cheese over the mashed potatoes.
- Bake: Preheat the oven to 400°F (200°C) and bake for 20-25 minutes, or until the top is golden and the filling is bubbling.
Notes
- Use Fresh Herbs: While dried thyme and rosemary work fine, using fresh herbs adds a more vibrant flavor to the dish.
- Add Peas or Corn: For a more classic touch, toss in some frozen peas or corn to the meat mixture.
- Cheese Topping: Although traditional Shepherd’s Pie doesn’t include cheese, it adds a delicious crust if you prefer a richer dish.
- Broil for Extra Crunch: After baking, broil the Shepherd’s Pie for 2-3 minutes for an extra crispy potato topping.
