  • 2 cups cherry tomatoes

  • 2 large chicken breasts (cut in half) or 4 chicken thighs
  • 2 cloves garlic, crushed
  • 1/4 cup olive oil
  • 1 1/2 tbsp balsamic vinegar
  • 1/2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh basil, chopped
  • 2/3 cup Kalamata olives
  • 1/4 cup feta cheese, chopped (optional for Paleo/Whole30)

Optional substitutions:

  • Replace feta cheese with Dairy-Free Cheese if following a Paleo diet.
  • For a spicier kick, add crushed red pepper flakes.

Instructions

 

Step 1:
Preheat your oven to 400°F (200°C).

Step 2:
On a large sheet pan or roasting tray, add the chopped red and yellow peppers, red onion, artichoke hearts, lemon wedges, and cherry tomatoes.

Step 3:
In a small bowl, whisk together the garlic, olive oil, balsamic vinegar, smoked paprika, and oregano. Pour about 1/3 of the mixture over the veggies, then sprinkle with salt and pepper. Toss until everything is well-coated.

Step 4:
Place the chicken pieces on top of the veggies and brush them with more of the marinade. Pop the sheet pan in the oven and roast for 25 minutes.

Step 5:
Remove the sheet pan from the oven and add the olives, chopped basil, and feta cheese (if using). Pour the remaining marinade over everything and roast for an additional 5-10 minutes, until the chicken is cooked through (no longer pink in the center).
