  • 1 pound chicken breast, cut into bite-sized pieces
  • 2 Tbsp extra virgin olive oil, avocado oil, or unrefined coconut oil
  • 4 fresh garlic cloves, minced
  • 8 oz fresh button mushrooms
  • 2 red bell peppers, chopped
  • 1 bunch asparagus, ends trimmed and cut in halves
  • 1 medium zucchini, sliced
  • 1 Tbsp dry Italian seasoning
  • 2 Tbsps high-quality balsamic vinegar
  • Sea salt and black pepper, to your taste

Instructions

:

  1. Heat the oil over medium-high heat in a large skillet.
  2. Add the mushrooms and garlic, and sauté for 5 minutes until the mushrooms soften and release their moisture.
  3. Add the chicken pieces and cook for another 5 minutes until browned on all sides.
  4. Sprinkle in the Italian seasoning and drizzle with balsamic vinegar, then season with salt and pepper to taste.
  5. Add in the bell peppers, asparagus, and zucchini. Cook for an additional 10 minutes, or until the veggies are tender and everything is cooked through.
  6. Optional: Squeeze a bit of fresh lemon juice over the dish before serving for an added burst of freshness.
