- 12 oz smoked sausage, sliced into rounds
- 1 lb baby potatoes, halved
- 1 lb fresh green beans, trimmed
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly cracked black pepper, to taste
- 2 tablespoons chopped parsley
- 1 tablespoon butter (optional, for extra richness)
Instructions
- Preheat a large skillet over medium-high heat. Add olive oil and sliced sausage. Sauté for 5–7 minutes until browned and slightly crispy. Remove and set aside.
- In the same skillet, add halved baby potatoes. Season with garlic powder, onion powder, smoked paprika, red pepper flakes, salt, and pepper. Sauté for 10–12 minutes until golden and tender.
- Add trimmed green beans to the skillet. Cover and steam for 5–6 minutes until crisp-tender.
- Return the sausage to the skillet and toss everything together. Add butter if desired and let it melt. Sprinkle with chopped parsley before serving.
Notes
- Use turkey or chicken sausage for a leaner option.
- Substitute frozen green beans if fresh aren’t available (no need to thaw).
- Cover the skillet while cooking potatoes to speed up the process.
- Add a splash of broth or water if needed to deglaze the pan.
