Description
A hearty, flavorful one-pan dinner made with smoked sausage, tender baby potatoes, and fresh green beans, all sautéed with garlic, spices, and herbs. Perfect for weeknights, meal prep, or family meals.

12 oz smoked sausage, sliced into rounds
1 lb baby potatoes, halved
1 lb fresh green beans, trimmed
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/4 teaspoon red pepper flakes (optional)
Salt and freshly cracked black pepper, to taste
2 tablespoons chopped parsley
1 tablespoon butter (optional, for extra richness)
Instructions
Preheat a large skillet over medium-high heat. Add olive oil and sliced sausage. Sauté for 5–7 minutes until browned and slightly crispy. Remove and set aside.
In the same skillet, add halved baby potatoes. Season with garlic powder, onion powder, smoked paprika, red pepper flakes, salt, and pepper. Sauté for 10–12 minutes until golden and tender.
Add trimmed green beans to the skillet. Cover and steam for 5–6 minutes until crisp-tender.
Return the sausage to the skillet and toss everything together. Add butter if desired and let it melt. Sprinkle with chopped parsley before serving.
Notes
Use turkey or chicken sausage for a leaner option.
Substitute frozen green beans if fresh aren’t available (no need to thaw).
Cover the skillet while cooking potatoes to speed up the process.
Add a splash of broth or water if needed to deglaze the pan.
