Here’s what you’ll need:
1 lb ground sausage ( turkey, or chicken)
12 oz diced frozen hashbrowns (or fresh potatoes)
10 large eggs
1 Tbsp taco seasoning (or your favorite spice blend)
¼ cup shredded Mexican cheese
½ cup grape tomatoes, chopped

Instructions
Step1: Preheat the Oven
Set your oven to 375°F (190°C).
Grease a quiche pan or pie dish with nonstick spray.
Step2: Cook the Sausage
Heat a large skillet over medium heat.
Add 1 lb ground sausage and cook until browned.
Drain excess grease and remove from heat.
Step3: Add Hashbrowns
Add 12 oz frozen hashbrowns to the skillet.
Cook for 2-3 minutes, stirring occasionally.
Remove from heat and let cool slightly.
Step4: Prepare the Egg Mixture
In a large bowl, whisk 10 eggs until combined.
Stir in the cooked sausage and hashbrowns.
Add 1 Tbsp taco seasoning, ¼ cup shredded cheese, and ½ cup chopped tomatoes.
Step5: Assemble & Bake
Pour the egg mixture into the greased dish.

Bake for 22-26 minutes, until eggs are set.
