For the Caramelized Onions:

  • 3 large onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup beef broth
  • 1 tablespoon fresh thyme leaves (optional)

For the Mashed Potatoes:

  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Prepare the Mashed Potatoes
  1. Place the cubed potatoes in a large pot and cover them with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot.
  3. Add the milk and butter, then mash until smooth.
  4. Season with salt and pepper to taste. Keep warm until ready to serve.
Step 2: Caramelize the Onions
  1. In a large skillet, melt the butter and olive oil over medium heat.
  2. Add the sliced onions, sugar, salt, and black pepper. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 25-30 minutes.
  3. Add the beef broth and fresh thyme (if using), and cook for an additional 5 minutes until the liquid is mostly absorbed.
  4. Remove from heat and set aside.
