- 1/4 cup brown sugar
- 2 large eggs

Instructions
- Preheat the oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
- In a large bowl, combine the flour, rolled oats, 1 cup brown sugar, baking soda, and salt. Add the melted butter and mix until a crumbly texture forms.
- Press half of the crumble mixture firmly into the baking dish to create the base layer.
- In a separate bowl, whisk together the pumpkin puree, granulated sugar, 1/4 cup brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
- Pour the pumpkin filling evenly over the base layer.
- Sprinkle the remaining crumble mixture on top. Add chopped walnuts if desired.
- Bake for 40–45 minutes or until the top is golden brown and the pumpkin layer is set.
- Allow the bars to cool completely before slicing for clean, neat squares.
Notes
- For a nut-free version, omit the walnuts or replace them with pumpkin seeds.
- Use a gluten-free flour blend to make these bars gluten-free.
- Chilling the bars for 30 minutes before slicing makes cleaner cuts.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
