Description

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 ½ cups shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned and crumbled, about 5–6 minutes. Drain excess fat if needed.
  2. Add chopped onion and minced garlic to the skillet. Cook for about 2 minutes until fragrant.
  3. Stir in diced potatoes along with smoked paprika, oregano, salt, and black pepper. Mix well, cover, and cook for 12–15 minutes, stirring occasionally, until potatoes are fork-tender.
  4. Add diced red bell pepper and cook for another 3–4 minutes until softened.
  5. Sprinkle shredded cheddar cheese evenly over the mixture. Cover and let the cheese melt for 2–3 minutes until gooey.
  6. Garnish with fresh parsley and serve hot straight from the skillet.
