- 4 medium potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 ½ cups shredded cheddar cheese
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon black pepper
- 1 teaspoon salt (or to taste)
- ½ teaspoon dried oregano
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned and crumbled, about 5–6 minutes. Drain excess fat if needed.
- Add chopped onion and minced garlic to the skillet. Cook for about 2 minutes until fragrant.
- Stir in diced potatoes along with smoked paprika, oregano, salt, and black pepper. Mix well, cover, and cook for 12–15 minutes, stirring occasionally, until potatoes are fork-tender.
- Add diced red bell pepper and cook for another 3–4 minutes until softened.
- Sprinkle shredded cheddar cheese evenly over the mixture. Cover and let the cheese melt for 2–3 minutes until gooey.
- Garnish with fresh parsley and serve hot straight from the skillet.

- Use Yukon Gold or Russet potatoes for best texture.
