Ingredients
Scale
480 g potatoes (cut into halves or quarters, depending on size)
55 g olive oil
2 garlic cloves, pressed
50 g freshly grated Parmesan
1 tsp onion powder
1 tsp paprika
1 tsp dried oregano
Black pepper, to taste
1 tbsp unsalted butter, melted
1 tbsp fresh parsley, chopped
Coarse salt, to taste
Optional Substitutions:
For a dairy-free version, substitute Parmesan with a vegan-friendly cheese.
To make it gluten-free, ensure your Parmesan is free from additives.
Use sweet potatoes for a twist on this recipe, offering a slightly sweeter flavor profile.
Instructions
Step 1: Prepare the Potatoes
Cut the potatoes in half lengthwise and then into quarters, depending on their size. You want the pieces to be roughly uniform to ensure even roasting.
Boil the potato pieces in salted water for 10 minutes to soften them slightly. Drain and pat dry with a clean kitchen towel.
Step 2: Season the Potatoes
In a large bowl, combine olive oil, pressed garlic, freshly grated Parmesan, onion powder, paprika, dried oregano, and black pepper. Toss the potatoes in this mixture until fully coated.
Preheat your oven to 210°C (convection mode or static heat).
Step 3: Roast the Potatoes
Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
Roast for 35 minutes, flipping the potatoes halfway through cooking to ensure both sides are golden and crispy.
Step 4: Add the Finishing Touches
Once the potatoes are golden and crispy, brush them with a mixture of melted butter, chopped parsley, and a sprinkle of coarse salt for added flavor.
Notes
Use fresh ingredients: Freshly grated Parmesan and fresh garlic will elevate the flavor of this dish.
Ensure even roasting: Make sure the potatoes are spread out in a single layer on the baking sheet. This ensures even cooking and avoids soggy potatoes.
For extra crispiness: You can increase the oven temperature to 220°C during the last 5 minutes of cooking.
