  • Black pepper, to taste
  • 1 tbsp unsalted butter, melted
  • 1 tbsp fresh parsley, chopped
  • Coarse salt, to taste

Instructions

Step 1: Prepare the Potatoes

  • Cut the potatoes in half lengthwise and then into quarters, depending on their size. You want the pieces to be roughly uniform to ensure even roasting.
  • Boil the potato pieces in salted water for 10 minutes to soften them slightly. Drain and pat dry with a clean kitchen towel.

Step 2: Season the Potatoes

  • In a large bowl, combine olive oil, pressed garlic, freshly grated Parmesan, onion powder, paprika, dried oregano, and black pepper. Toss the potatoes in this mixture until fully coated.
  • Preheat your oven to 210°C (convection mode or static heat).

Step 3: Roast the Potatoes

  • Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
  • Roast for 35 minutes, flipping the potatoes halfway through cooking to ensure both sides are golden and crispy.

Step 4: Add the Finishing Touches

  • Once the potatoes are golden and crispy, brush them with a mixture of melted butter, chopped parsley, and a sprinkle of coarse salt for added flavor.
