- ½ cup mayonnaise
- 4 oz cream cheese, softened
- ½ tsp garlic powder
- ¼ tsp paprika
- ¼ tsp Old Bay seasoning
- 4 oz jarred pimentos, drained (reserve 1 tbsp juice)
- 2 tsp yellow onion, grated
- 2 cups sharp cheddar cheese, grated
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Preheat your oven to 350°F. Line a baking sheet with parchment paper and arrange the phyllo cups spaced apart.
- In a medium bowl, blend the mayonnaise, softened cream cheese, garlic powder, paprika, and Old Bay seasoning until smooth.
- Stir in the drained pimentos, reserved juice, grated yellow onion, and sharp cheddar cheese. Season to taste with salt and pepper.
- Spoon the mixture into each phyllo cup using a small cookie scoop or spoon.
- Bake for 10–12 minutes or until the cheese is melted and the filling is bubbly.
- Let cool for 2–3 minutes and serve warm.

- Use room temperature cream cheese for smoother mixing.
- Filling can be made 1 day ahead and stored in the fridge.
