Ingredients

Scale

  • 1 tablespoon olive oil: For sautéing the shrimp and mushrooms.
  • 1 pound of large shrimp, peeled and deveined.
  • ¼ teaspoon salt: To enhance the shrimp’s flavor.
  • ¼ teaspoon red pepper flakes: Adds a subtle heat.
  • 8 ounces of white mushrooms, sliced.
  • ½ cup basil pesto: For that signature flavor.
  • ½ cup chicken broth: To add depth to the sauce.
  • 8 oz spiral pasta: Spiral pasta is recommended for best results.
  • Chopped fresh basil: Optional, for garnish.

Optional Substitutions:

  • Vegetarian Option: Substitute shrimp with sautéed tofu or zucchini.
  • Gluten-Free: Use gluten-free pasta to make this dish suitable for those with gluten sensitivities.

Instructions

Step 1: Cooking the Shrimp

  1. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil.
  2. Once the oil is hot, add the shrimp, season with ¼ teaspoon salt and ¼ teaspoon red pepper flakes.
  3. Cook for about 3 minutes, turning once midway, until the shrimp is pink and cooked through.
  4. Remove the shrimp from the skillet and set aside.

Step 2: Sautéing the Mushrooms

  1. In the same skillet, add another 1 tablespoon of olive oil.
  2. Add the sliced mushrooms and season with ¼ teaspoon salt.
  3. Cook for about 2-3 minutes, stirring occasionally, until the mushrooms release their liquid and soften.

Step 3: Creating the Pesto Sauce

  1. Add the cooked shrimp back to the skillet.
  2. Pour in ½ cup of basil pesto and ½ cup of chicken broth.
  3. Stir on medium heat until everything is well combined, then remove from heat.

Step 4: Preparing the Pasta

  1. Cook the spiral pasta according to the package instructions.
  2. Once cooked, drain the pasta and add it to the skillet with the shrimp and sauce.
  3. Toss everything together until the pasta is evenly coated.

Step 5: Final Touches

  1. Serve the pasta topped with freshly chopped basil.
  2. Enjoy your Pesto Shrimp Mushroom Pasta hot with a side of crusty bread.

Notes

  • Use Fresh Ingredients: For the best flavor, use fresh basil for the pesto and high-quality olive oil.
  • Adjust the Spice: If you prefer a spicier dish, increase the amount of red pepper flakes.
  • Don’t Overcook the Shrimp: Overcooking can make the shrimp tough. Aim for a light pink color.
