Ingredients

Scale

Main Ingredients:

  • 2 tablespoons olive oil
  • 1 lb shrimp (peeled and deveined)
  • 10 oz white mushrooms (sliced)
  • ⅓ cup basil pesto
  • 4 garlic cloves (minced)
  • ¼ cup dry white wine (plus more if needed)
  • ½ cup sodium-free chicken broth (adjust salt if not sodium-free)
  • ¼ teaspoon salt

Seasoning Mixture:

  • 1 teaspoon Italian Seasoning (thyme, oregano, basil – combined)
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • Chopped fresh basil

Pasta:

  • 10 oz fettuccine pasta (use gluten-free for a gluten-free version)

Optional Substitutions:

  • Swap shrimp for scallops or chicken for a different protein option.
  • Use vegetable broth instead of chicken broth for a vegetarian version.
  • Substitute zoodles or gluten-free pasta for a low-carb alternative.

Instructions

Step 1: Season the Shrimp

  • In a large mixing bowl, toss the peeled and deveined shrimp with the seasoning mixture (Italian seasoning, paprika, red pepper flakes, and salt). Mix well to ensure each shrimp is coated evenly.

Step 2: Cook the Shrimp

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the seasoned shrimp and cook for 2-3 minutes on each side, until the shrimp turn pink and are cooked through. Remove from the skillet and set aside.

Step 3: Sauté the Mushrooms

  • In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the sliced mushrooms and ¼ teaspoon of salt. Sauté for about 2 minutes, or until the mushrooms release their liquid and soften.

Step 4: Add Garlic and Wine

  • Add the minced garlic to the mushrooms and cook for 1-2 minutes until fragrant. Pour in the dry white wine, stirring to deglaze the pan. Let it simmer for 1-2 minutes until the wine reduces slightly.

Step 5: Combine Shrimp and Pesto

  • Return the cooked shrimp to the skillet. Add the basil pesto and stir until the shrimp and mushrooms are evenly coated.

Step 6: Add Chicken Broth

  • Pour in the chicken broth and let the sauce simmer for 2-3 minutes to allow flavors to meld.

Step 7: Cook the Fettuccine

  • In a separate large pot, bring water to a boil. Cook the fettuccine pasta according to package instructions. Drain and do not rinse.

Step 8: Combine Pasta and Sauce

  • Add the cooked pasta to the skillet with the shrimp and mushroom sauce. Toss everything together to ensure the pasta is fully coated.

Step 9: Serve and Enjoy

  • Plate the pasta and garnish with freshly chopped basil and additional red pepper flakes if desired.

Notes

  • Use fresh garlic and herbs for the best flavor.
  • If your sauce is too thick, add a splash of pasta water or extra broth.
  • Ensure shrimp are not overcooked, as they can become rubbery.
