- 1.8 oz parmesan cheese (about 1 cup grated)
- 2 Tbsp olive oil, divided
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp dried oregano
- ½ tsp sea salt
- ¼ tsp black pepper

Instructions
Step 1: Prepare the Potatoes
- Preheat the oven to 400°F (200°C).
- Thoroughly wash and scrub the potatoes. Dry them well with a kitchen towel to ensure they crisp up during baking.
- Cut the potatoes vertically in half, ensuring each piece has a flat surface for the parmesan coating.
Step 2: Create the Parmesan Mixture
- In a medium-sized bowl, combine the grated parmesan, paprika, garlic powder, salt, oregano, and black pepper.
- Stir until the mixture is evenly blended.
Step 3: Prepare the Baking Sheet
- Line a baking sheet with parchment paper to prevent sticking.
- Brush the parchment paper with 1 Tbsp of olive oil.
- Evenly sprinkle the parmesan mixture over the parchment, creating a layer of cheese.
Step 4: Arrange the Potatoes
- Place the potato halves skin side up (cut side down) on the baking sheet.
- Press the potatoes down firmly to ensure the cut side is fully coated in the cheese mixture.
Step 5: Bake to Perfection
- Brush the tops of the potatoes with the remaining 1 Tbsp of olive oil.
- Bake in the oven for 25 minutes or until the potatoes are golden and crispy.
- Remove from the oven and let them cool slightly before serving.
