  • 2.4 lb baby potatoes, scrubbed and halved (leave the skin on for extra texture)
  • 1.8 oz parmesan cheese (about 1 cup grated)
  • 2 Tbsp olive oil, divided
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp sea salt
  • ¼ tsp black pepper

Optional Substitutions:

  • For a dairy-free option, substitute parmesan with a vegan cheese alternative.
  • Want a bit of heat? Add a pinch of cayenne pepper for a spicy kick.
  • Use sweet potatoes instead of baby potatoes for a unique flavor profile.

Instructions

Step 1: Prepare the Potatoes

  1. Preheat the oven to 400°F (200°C).
  2. Thoroughly wash and scrub the potatoes. Dry them well with a kitchen towel to ensure they crisp up during baking.
  3. Cut the potatoes vertically in half, ensuring each piece has a flat surface for the parmesan coating.

Step 2: Create the Parmesan Mixture

  1. In a medium-sized bowl, combine the grated parmesan, paprika, garlic powder, salt, oregano, and black pepper.
  2. Stir until the mixture is evenly blended.

Step 3: Prepare the Baking Sheet

  1. Line a baking sheet with parchment paper to prevent sticking.
  2. Brush the parchment paper with 1 Tbsp of olive oil.
  3. Evenly sprinkle the parmesan mixture over the parchment, creating a layer of cheese.

Step 4: Arrange the Potatoes

  1. Place the potato halves skin side up (cut side down) on the baking sheet.
  2. Press the potatoes down firmly to ensure the cut side is fully coated in the cheese mixture.

Step 5: Bake to Perfection

  1. Brush the tops of the potatoes with the remaining 1 Tbsp of olive oil.
  2. Bake in the oven for 25 minutes or until the potatoes are golden and crispy.
  3. Remove from the oven and let them cool slightly before serving.

Notes

  • Choose the Right Potatoes: Baby potatoes are ideal, but fingerlings or Yukon Golds work just as well.
