  • 3 tablespoons unsalted butter (divided)
  • 16 ounces large shrimp (peeled, deveined, and tails removed)
  • 2 cloves garlic (minced)
  • 2 cups chicken broth (for a deeper flavor, substitute with seafood broth)
  • 1 cup milk (whole milk or plant-based milk like almond for dairy-free options)
  • 8 ounces dry fettuccine noodles (use gluten-free pasta if needed)
  • 1 cup grated Parmesan cheese (ensure it’s freshly grated for best results)
  • 1/2 cup heavy cream
  • 1/4 teaspoon pepper
  • Pinch of nutmeg (optional, but adds a wonderful warmth to the dish)
  • Fresh parsley for garnish

Instructions

Melt 2 tablespoons of butter in a sauté pan over medium heat. Once melted, add the shrimp. Cook the shrimp for about 1-2 minutes per side until they become opaque. Once cooked, transfer the shrimp to a plate and cover to keep warm.

Step 2:
In the same pan, add the remaining tablespoon of butter along with the minced garlic. Cook the garlic for 30 seconds, making sure not to burn it.

Step 3:
Add the chicken broth, milk, and fettuccine noodles. Stir the mixture to separate the noodles. Once it starts to boil, cover the pan and reduce the heat to low. Let the noodles simmer for 11 minutes, stirring once halfway through to prevent them from sticking.

Step 4:
Remove the lid and check the liquid level. Most of it should be absorbed by now. Add the heavy cream, Parmesan cheese, pepper, and a pinch of nutmeg. Stir until the cheese has melted and the sauce becomes creamy.

Step 5:
Finally, return the shrimp to the pan and stir everything together. Remove the pan from heat and let it sit for 5 minutes to allow the sauce to thicken slightly. Garnish with freshly chopped parsley before serving.

Notes

 

  • Use fresh shrimp. Frozen shrimp work in a pinch, but fresh shrimp will make the dish stand out with flavor.
  • Don’t overcook the shrimp. Shrimp cook very quickly—overcooking will make them rubbery. Keep a close eye on them!
  • Stir the pasta midway. This prevents the noodles from sticking and ensures they cook evenly.
  • Use freshly grated Parmesan. Pre-grated cheese won’t melt as smoothly and can make the sauce grainy.
