Ingredients
Salad:
- 8 cups chopped lettuce
- ¼ cup red cabbage, shredded
- ¼ cup carrots, julienne
- ¼ cup red onion, thinly sliced
- ½ cup black olives
- 2 roma tomatoes, sliced
- 1/3 cup pepperoncinis
- 1 cup croutons
- ¼ cup grated Parmesan cheese
Dressing:
- 3/4 cup extra virgin olive oil (smooth or robust depending on preference)
- 1 packet (.7 oz.) Zesty Italian Dressing Mix
- 1/3 cup white vinegar
- ¼ cup water
- 1 tablespoon grated Romano cheese (or sub with Parmesan)
- 3 teaspoons sugar
- 1 ½ teaspoons mayonnaise (avoid miracle whip)
- 1 teaspoon Dijon mustard
- ½ teaspoon EACH: Italian seasoning, salt
- ¼ teaspoon EACH: pepper, garlic powder
Instructions
Step 1: Make the Dressing
To prepare your dressing, combine all dressing ingredients in a mini food processor or jar with a lid. Shake or blend until well mixed and emulsified. Once done, refrigerate until needed.
Step 2: Prepare the Vegetables
Chop the lettuce, shred the cabbage, julienne the carrots, and thinly slice the red onion. Place all vegetables in a large bowl, ensuring they are well mixed.
Step 3: Add Extra Ingredients
Layer the olives, tomatoes, and pepperoncinis on top of the salad mixture. Use a paper towel to blot any excess moisture from the tomatoes to keep the salad fresh.
Step 4: Toss and Serve
When ready to serve, drizzle your desired amount of dressing over the salad and toss gently. Top with croutons and Parmesan cheese before serving.
Notes
- Use Fresh Ingredients: To replicate the restaurant’s signature crispness, use the freshest lettuce, tomatoes, and other veggies.
- Dressing Balance: You won’t need all the dressing for one salad. Use about half or less to avoid overdressing.
- Customize It: Add grilled chicken or shrimp for a heartier meal version.
