  • 2 tablespoons taco seasoning
  • 2 tablespoons finely chopped seeded jalapeño pepper
  • 1 tablespoon finely chopped chipotle peppers in adobo sauce
  • 32 sheets phyllo dough (14×9-inch size)
  • 3/4 cup butter, melted
  • 1/2 cup ranch salad dressing
  • 1/2 cup salsa

Instructions

Step 1: Prepare the Filling
In a skillet, cook the ground beef and onion over medium heat until the beef is browned. Drain excess fat. Add taco seasoning, tomatoes, corn, jalapeño, and chipotle peppers. Stir and cook for an additional 2-3 minutes until well combined.

Step 2: Layer the Phyllo Dough
On a clean work surface, lay out one sheet of phyllo dough. Brush with melted butter, then place another sheet on top. Repeat until you have four layers. Cut the layered dough into 2-inch-wide strips.

Step 3: Fill the Triangles
Spoon a small amount of the beef mixture onto the end of each strip. Sprinkle with a mix of cheddar and pepper jack cheese. Fold the strip over to form a triangle, continuing to fold until the strip is fully wrapped around the filling.

Step 4: Bake the Triangles
Preheat your oven to 375°F (190°C). Place the triangles on a baking sheet lined with parchment paper. Brush each triangle with melted butter and bake for 15 minutes or until golden brown and crispy.

Step 5: Make the Dipping Sauce
In a small bowl, combine the ranch dressing and salsa. Mix well until fully blended.
