  • Salt and pepper to taste
  • Sliced green onions and sesame seeds for garnish

Optional Substitutions:

  • For a gluten-free option, use tamari instead of soy sauce.
  • For a vegan stir-fry, omit the oyster sauce or substitute it with hoisin sauce.

Instructions

Step 1: Heat the Oil

Start by heating vegetable oil in a large wok or skillet over medium-high heat. Once the oil is hot, add the minced garlic and ginger, and stir constantly for about 30 seconds until they release their fragrance.

Step 2: Add the Mushrooms

Next, toss in the sliced mushrooms. Cook them for about 5-7 minutes until they start to brown and release their juices. Stir occasionally to ensure even cooking.

Step 3: Add the Bok Choy

Once the mushrooms are browned, add the chopped bok choy to the wok. Stir and cook for 3-4 minutes until the leaves are wilted and the stems are tender.

Step 4: Flavor the Stir-Fry

Pour in the soy sauce, oyster sauce (if using), and sesame oil, stirring to coat the vegetables evenly. For a thicker sauce, mix cornstarch with water and stir it into the pan. Let the sauce cook for another minute until it thickens.

Step 5: Season and Serve

Season the stir-fry with salt and pepper to taste, and transfer it to a serving dish. Garnish with sliced green onions and sesame seeds for added flavor and presentation.
