Ingredients

Scale
  • 3 1/2 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 cup warm water (about 110°F)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 8 ounces fresh mozzarella (cut into small cubes)
  • 2 tablespoons chopped fresh rosemary leaves
  • 1/4 cup grated Parmesan cheese
  • 4 cups water (for the baking soda bath)
  • 1/4 cup baking soda
  • Grated Parmesan cheese (for topping)
  • Fresh rosemary leaves (for garnish)

Optional Substitutions:

  • Gluten-free flour: Use a gluten-free blend to cater to dietary restrictions.
  • Vegan cheese: For a dairy-free version, opt for plant-based mozzarella.

Instructions

Step 1: Prepare the Dough
Start by mixing warm water, sugar, and yeast in a bowl. Let the mixture sit for about 5 minutes, until it becomes frothy. Then, add flour and salt. Knead the dough until it’s smooth and elastic. Cover and let it rise for 30-45 minutes.

Step 2: Prepare the Filling
While the dough is rising, mix the mozzarella, rosemary, and grated Parmesan in a small bowl. This cheesy filling will be the heart of your pretzels.

Step 3: Shape the Pretzels
Once the dough has risen, divide it into 8 equal portions. Roll each portion into a long rope, flatten it slightly, and add a spoonful of the mozzarella mixture in the center. Fold the dough over the filling and seal the edges tightly.

Step 4: Boil the Pretzels
In a large pot, bring 4 cups of water to a boil. Remove from heat, stir in the baking soda, and carefully dip each pretzel in the water for 30 seconds. This step is crucial for achieving that signature chewy texture.

Step 5: Bake the Pretzels
Preheat your oven to 425°F (220°C). Place the boiled pretzels on a baking sheet lined with parchment paper, sprinkle them with Parmesan cheese and rosemary, and bake for 15-20 minutes until they turn golden brown.

Step 6: Serve
Let the pretzels cool slightly before serving. For an extra treat, serve them with dipping sauces like marinara or garlic butter.

Notes

  • Seal the edges tightly: To prevent the cheese from leaking out during baking, make sure to pinch the dough edges tightly.
  • Boil in baking soda water: This step is key for achieving that traditional pretzel texture, so don’t skip it!
  • Add extra flavor: Customize your pretzels by adding sesame seeds or garlic powder to the dough before baking.
